Located in the centre of Arundel in the former stables of the castle, The Parsons Table combines an ancient, salt-of the-earth feel with stylish modern decor in subtle shades of white, grey and dusky turquoise. Chef-owner Lee Parsons honed his culinary skills at Claridge's Hotel and Le Manoir aux Quat'Saisons before moving to North America and running his own kitchens, as well as becoming a regular on Canadian television. His wife and business partner Liz, who runs the front of house, has extensive experience in hotel management and has won international awards for her work in catering.
